Vegan omelette recipe

You may have seen my Vegan egg recipe from a while ago, so if you liked that then i'm sure you'll like this vegan omelette recipe, its very similar to how i made the vegan egg, and makes for a great high protein healthy alternative to regular eggs.
Its delicious easy to make and perfect for a weekend brunch, hope you enjoy...


1 block of tofu (firm or silken can work)
 100ml unsweetened soy milk approx (or other unsweetened plant milk)
juice of 1 lemon
1tbsp of apple cider vinegar
2-3 tablespoons of nutritional yeast
1tsp Turmeric
salt, black pepper and paprika to taste

+ Veggies/fillings of choice, i used 
Mushrooms, peppers and black olives

(feel free to add oil or dairy free butter to the mix if you like, i just tried to keep it as low fat as possible)

( makes approx 2 omlettes )
time: prep 5 mins  cook time: 15mins-20mins


1. Start by breaking up your tofu into small pieces then placing in a blender or food processor along with all the other ingredients.
Whizz it all up until it becomes like a sort of thick pancake batter, add more liquid if required.

2. Once you have your mixture its time to cook, oil your pan first then pour the mix into the pan so it touches the edges, add in your chopped veggies and fillings. 

3. Cook on a medium heat for around 15minutes until it becomes firm and cooked all the way through, be very careful when removing your egg from the pan as they do have a tendency to fall apart, thats why i left it in the pan for this post, couldn't risk it!

Eat immediately
