Raw vegan pasta salad

I'm a huge pasta lover, and one of my fave pasta dishes besides pesto pasta is a 'pasta salad', with it being summer i decided to come up with a lighter option which is a raw vegan pasta salad.
Its light and refreshing and easily digestible so perfect for the summer months, and has a wealth of health benefits, and its delicious of course!
Its made from a base of zucchini noodles so if you like zucchini then i'm sure you'll like this, but if your not a fan of the green goodness then you can swap it out for cucumber noodles, carrot or even beet noodles, anyway lets get into the recipe...


2 zucchini's/courgettes (spiralled)
 (you could also buy pre spiralized)
sweetcorn raw 
sprouted beans/chickpeas 
cherry tomatoes 


  • Start by preparing your zucchini noodles no need to buy a big fancy spiralizer you can get a small hand spiralizer cheaply on ebay or amazon for around £3. They don't make your noodles look as pretty but they still taste the same.                                                                                    You can also just buy the zucchini noodles pre-prepared from most grocery stores like tesco, waitrose etc. 
  • Then prepare all the other ingredients of your choice i used raw sweetcorn, some sprouted mung beans which make a great raw alternative to traditional beans used in pasta salads.           Along with some red pepper, cucumber, mushrooms, and cherry tomatoes.
  • Next place all your ingredients including your zucchini noodles into a large salad bowl, squeeze in some lime juice and stir. 
  • I then popped mine into a bowl and topped with some avocado, fresh herbs and drizzled with tahini. 

(Adjust amounts depending on serving size)
