raw vegan tacos


I've been eating a lot of raw foods lately as i haven't felt much like eating hot foods due to the extreme heat here in the uk, i've also found them much better to digest, so today i thought i'd share with you one of my go to summer meals 'raw vegan taco's' not only are they healthy and nutritious but they are absolutely delicious and a great alternative to regular tacos, perfect if your looking to slim down for bikini season or just fancy a light meal, hope you enjoy...



Ingredients 

Romaine lettuce 
Mushroom (any variety will do i used chestnut) 
Tomatoes 
Cucumber 
Celery 
Coriander
Lime juice 

For the Guacamole
1 avocado 
clove of garlic 
lime juice 
coriander 
paprika 
chilli powder 
salt, black pepper 



Recipe 

Start by dicing all your ingredients apart from the romaine, the romaine will act as your taco boats. 
The mushroom makes a great alternative to taco meat or soy, and the chopped veggies will give it more crunch, feel free to spice them up with more veggies like corn or peppers. 

Place you mushroom taco meat and veggie mix into your romaine tacos, and dress with lime juice.

Next prepare your guacamole 
You can whizz up all your ingredients in a food processor or just mash them up by hand using a fork if you prefer a thicker guac. 

Top your tacos with some guacamole, you could also create a raw salsa to serve alongside or even a raw sour cream made from cashews.
