best vegan oil free pesto!


I'm a huge Pesto lover, pesto pasta has to be my fave meal of all time! You may have noticed from my blog i've got a few Vegan pesto recipes up. 
I've been in search of the perfect Vegan pesto recipe for a while now and i'm pretty sure I've found it!
Not only is it deliciously creamy, indulgent and vibrant in colour, but you'll be pleased to know its also super healthy, its oil free and made from all natural ingredients and has extra greens, so its a win win! 
Mostly its just yummy which is all that counts really!..


Ingredients 

50g of sunflower seeds 
50g of pine nuts 
(you can also substitute for cashews if you prefer, or just fully sunflower seeds)
large handful of spinach 
large handful of fresh basil 
Juice of 1 lemon 
1 clove Garlic 
2tbsp of apple cider vinegar 
2tbsp of nutritional yeast 
(optional) just adds a cheesy flavour 

You will need 
A food processor or high speed blender 



Recipe 

1.  Take all of your ingredients and place them into your food processor or blender and blitz it up until smooth and pesto like (of course!)
Add extra liquid lemon or water if desired, yes its that easy!

2. Serve alongside some pasta or use as a dressing in salads. 
I served mine with some Gluten free brown rice penne along with some extra spinach and grilled Tofu (which goes great with pesto by the way!)

This makes approximately 2-3 portions of pesto best consumed with 2 days.
