Vegan egg recipe

Yes you saw that right a Vegan egg recipe, sounds a little strange but its pretty great.
I came up with this recipe as I'm trying to incorporate more protein into my diet, (gotta get those gains), so i wanted to make something similar to an egg that has lots of protein and is much healthier, its a perfect alternative for vegans and non vegans a like, whether your trying to cut back on dairy products or just want a change this is the recipe for you.
It's just as high in protein as an egg if not more, lower in fat and cholesterol free unlike a typical egg.
Ofcourse its also delicious which is all that counts really goes great on toast, a sandwich or to serve alongside a cooked breakfast hope you like it!

Does it taste like an egg?
Its been years since i had an egg so i'm not too sure however it does look like an egg and has a similar consistency its made from tofu so if you've ever had a tofu scramble then its quite similar to that.


1 block of tofu (firm or silken can work)
around 100ml unsweetened soy milk (or other unsweetened plant milk)
juice of 1 lemon
1tbsp of apple cider vinegar
2-3 tablespoons of nutritional yeast
1tsp Turmeric
salt, black pepper and paprika to taste

(feel free to add oil or dairy free butter to the mix if you like, i just tried to keep it as low fat as possible)

( makes approx 2-3 egg rounds)
time: prep 2 mins  cook time: 15mins


1. Start by breaking up your tofu into small pieces then placing in a blender or food processor along with all the other ingredients.
Whizz it all up until it becomes like a sort of thick pancake batter, add more liquid if required.

2. Once you have your mixture its time to cook, oil your pan first then pour the mix into the pan making small rounds like you would pancakes, if you have a mould you can cook in this also to get a perfect shape, i actually used a mould but it still didn't turn out perfect haha!

3. Cook on a medium heat for around 15minutes until it becomes firm and cooked all the way through, be very careful when removing your egg from the pan as they do have a tendency to fall apart.
Eat immediately
I served mine on a slice of gluten free toast and topped with avocado and some spinach and tomatoes on the side, which made for a delicious brunch!
