Butternut Squash Healthy Vegan Mac & Cheeze

This delicious butternut squash mac & cheese is something I've been making for a while now, in-fact i like to think i came up with the recipe but i'm sure that will be argued.
Its creamy, comforting, filling and very healthy.
As with most of my recipes its Vegan & Gluten free but can be altered, hope you like it!...


250-300g of pasta
(i used macaroni style pasta made from rice and corn, but feel free to use any)

For the sauce
1 whole butternut squash
a little Cashew milk 
(or any other plant based milk of your choice preferably unsweetened)
4-6 tablespoons of nutritional yeast
1-2 cloves of garlic
2 teaspoons of turmeric
Black pepper, sea salt, smoked paprika and any herbs of your choice
(You can also use a little oil if you wish i tend to keep things oil free)

(makes approx 2 servings)


Start by preparing your sauce, you'll first need to cook your butternut squash i boiled mine, but you can steam or bake if you prefer.
Once cooked place all of your sauce ingredients including the squash into a food processor or blender and whizz it up until it forms a smooth sauce like texture.
Next you'll want to cook your pasta i'm not gonna tell you how to do that as i'm sure you know!

Heat up your sauce on the hob to desired temperature and then add your pasta and stir, you can eat it straight away, but i also recommend baking in the oven for a crispy pasta bake style macaroni, i ate mine along with some broccoli because mac & cheese and broccoli goes so well together.
Feel free to top with some vegan cheese or extra nutritional yeast.
