Pumpkin & Pine nut Pizza



Since its Autumn I have yet another delicious Pumpkin recipe for you.
This pumpkin and pine nut pizza is a healthy yet indulgent delight perfect on chilly fall nights, sharing with friends, and as a healthy option for the kids. 
As always its Vegan & Gluten free

Ingredients

Gluten free Pizza base or Pizza base mix 
(I used a pizza base mix from the brand Orgran) 
You can also make from scratch if you wish

Canned pumpkin/pumpkin puree 
Tomato puree
(Pesto would also be delicious instead)
Fresh tomatoes (sliced)
fresh basil
Pine nuts

(feel free to add any other toppings of your choice you can also add vegan cheese or nutritional yeast)




Recipe 

Start by preparing your pizza base, once that is sorted its time to top your pizza. 
Mix 3-4 tablespoons of canned pumpkin with 1 tablespoon of tomato puree, and spread evenly on to your base. 
Then take your sliced tomatoes and place them on top. 
Add any other toppings if desired. 

Place your pizza in the oven on 180 degrees for 20-30 minutes. 
Once your pizza is cooked sprinkle with pine nuts and fresh basil leaves. 
You can also bake your pizza with the nuts and basil onto it, I just prefer to add them at the end to avoid over cooking.
