Dark chocolate covered Pumpkin spice energy balls



These delicious pumpkin spice energy balls are a great healthy snack alternative, perfect alongside a cup of coffee, or as a halloween 'trick or treat' or for parties.
They are all raw minus the dark chocolate, Vegan & Gluten free.
Feel free to leave out the chocolate as they are still very indulgent, but why wouldn't you want to dip anything in chocolate?!




Ingredients

100g of cashews
150g of dates
a sprinkle of pumpkin seeds
100g bar of dark chocolate or chocolate chips
1tbsp of canned pumpkin
1tsp of cinnamon
1/2 a teaspoon of nutmeg, ginger, and cloves
I also added a lil turmeric and maca powder for extra health benefits!

(Makes approx 6 energy ball 2.5-3cm diameter)

I would recommend you first start by soaking your cashews & dates in some boiling water for a few minutes, as this helps make them easier to blend.
Then simply place all of the ingredients minus the dark chocolate, into a food processor or blender and blend until it becomes a fine cookie dough like texture.

Now its time to shape your mixture into energy balls, you can do this by first soaking your hands in warm water then take a chunk of the mix and roll it in the palms of your hands, until it creates a small ball, around 2.5cm diameter but you can make bigger or smaller.

Once you've created all your balls, place them in the freezer for a few hours so they can set.
Now its time to dip them in chocolate.
Melt your dark chocolate on a low heat in a pan, you could also microwave.
Next take your energy balls stick in a cocktail stick (not necessary but just makes it a little easier) and dip into your melted chocolate.
Then place onto a tray or plate, and leave them to set in the fridge or you can just eat straight away.
They can last in the freezer for up to 2 weeks.

  2. These look so delicious! I can't eat cashews but I could sub them out for walnuts and I think this would still work really well :)
