Detox salad recipe #2

As a chronic illness sufferer more specifically Endometriosis, I tend to use food like medicine, so here is a great Detoxifying salad recipe, I came up with perfect for Endometriosis, and just all around general health.
Not only is it good for you, but its also delicious, so don't be afraid to give it a try!
It is also Vegan and Gluten free so fit for all!

(kale is very high in iron amongst other things, so is essential for Endo women, and women in general.)

(Beetroots are an excellent source of folic acid and a very good source of fibre, manganese and potassium.)

Red pepper 
(peppers in general contain vitamin C & vitamin B6, however red peppers are the most nutritionally dense and the tastiest in my opinion.)

(Tomatoes are a major source of antioxidant lycopene, which is thought to reduce the risk of heart disease and some cancers.)

(This tasty little herb is an all round powerhouse of nutrients including, magnesium, iron, vitamin C, vitamin K, Potassium and calcium.)

(Chickpeas are very high in protein, so are a perfect source for vegans and vegetarians.)

(avocados are rich in fatty acids amongst other nutrients, and don't be afraid of the fats in avocado because there extremely good for you and necessary for a healthy diet.)

Mustard Ginger maple dressing

Wholegrain mustard 
(Mustard seeds are high in Vitamin A, and a great source of minerals like potassium, calcium and phosphorous.)
Fresh grated ginger 
(Ginger is a natural anti-immfamitory, so is great if you suffer from chronic pain, it is also used to aid digestion and reduce nausea.)
Apple cider vinegar
(ACV is a great source of probiotics so helps aid in digestion, and detoxify the body.)
Lemon juice 
(lemon is a natural diuretic so perfect for detoxing and is high in vitamin C.)
(Turmeric like its relative ginger is also anti-immflamatory and is full of antioxidants.)
Black pepper 
(its a good idea to take your turmeric with black pepper as it actually enhances the properties.)
Maple syrup 
or another sweetener of you choice e.g. agave)
