4 Easy Vegan breakfast ideas for Back to School/University



Since its almost Back to School/uni time, I thought i would share with you some of my favourite quick and Easy Vegan breakfast ideas for when you don't have much time on your hands.
Which makes them perfect for a School/Work morning. 
I also want to mention that all of the recipes are not only Vegan but also Gluten free, and are adaptable to suit your own needs.

PEANUT BUTTER GRANOLA



The first recipe is this deliciously indulgent Homemade Peanut butter granola, Its definitely one for the sweet tooth.
This one does take a little overnight prepping, however once its made you've got a whole batch of it and have breakfast sorted for the week!
If your not a big PB fan you can also change it up for almond butter or cashew if you prefer!



Ingredients 

 4 tablespoons of Peanut butter 
 250g of Gluten free oats (or regular)
 2-3 tablespoons of maple syrup (or any syrup of your choice)
 1 tsp of cinnamon  (optional)
 1 tablespoon of coconut oil
Feel free to add any other ingredients of your choice like nuts, seeds, dried fruit, etc.



Recipe 

Place your peanut butter, maple syrup, and coconut oil into a mixing bowl, mix all the ingredients together to form a paste.
Then add in your oats and cover all of the oats with the peanut butter mixture.
Place onto a baking tray, sprinkle cinnamon on top,
And bake in the oven for 15 mins or until golden brown.

You can also make the Granola in a pan which is actually what i did its a similar concept you just have to make sure to frequently stir the mix until it forms granola like clusters, please note the clusters won't come out as big made in the pan.



COFFEE COCOA & BANANA SHAKE


I was going to include a smoothie recipe but thought it might be too basic, so I came up with this shake which is absolutely delicious and a must try for you coffee lovers. 
I know your thinking banana & coffee probably sounds a little strange, but this was actually inspired by a starbucks drink i used to enjoy, it was about 10 years ago they used to sell a 'Banana caramel Frappucino' let me know if any of you remember this one?



Ingredients 

 1 whole banana (you can use a frozen one if you want it extra cold and ice cream like)
 1 tsp of coffee granules 
 1 tsp of cocoa/cacao powder 
 250ml of Almond milk (or any plant based milk of you choice)
 pinch of cinnamon 
 1tsp of Vanilla extract 



Recipe 

Whizz it all up in your blender and your good to go, one of the things i love about this recipe,
is you don't need a separate coffee because your breakfast and caffeine kick is all in one, and its suitable for on the go!



AVOCADO TURMERIC PORRIDGE 


This ones for you savoury people & avocado lovers. 
Its deliciously creamy, filling, and gives you a great start to the day, with those carbs from the oats and the fats from the avocado, you'll be energised till lunch. 



Ingredients

 50g of oats 
 200ml of plant based milk or water 
 1/2 a mashed avocado 
 1/2 a tsp of turmeric 
 Pinch of salt 
 (you can also sweeten it up by adding syrup)



Recipe 

This ones fairly straightforward you can cook in the pan/microwave or even just add boiling water.



CARROT & GINGER JUICE 


I Just realised your probably thinking that Avocado toast on the ocado life magazine to the right, looks way more appetising! well thats also another great breakfast recipe for you to try! 

Anyway.. this ones for you guys that aren't big breakfast people, but still want to have a nutritious start to the day, this light detoxifying yet energising juice is the perfect solution. 
Its also extremely delicious and if you've never tried fresh carrot juice I recommend you give it a go! 



Ingredients 

 Carrots about 500g makes a 200ml glass
 Fresh ginger a few pieces (totally optional of course if your not a fan of ginger)



Recipe 

For this one you obviously need a juicer, which are a great investment if you love fresh pressed juiced which are much more beneficial than store bought.
However you can also make carrot juice in a blender using a sieve, I have done this previously, you can find a tutorial online for this, I will also make a post on juicing with a blender if your interested?
