Vegan Chickpea 'tuna' mayo



Ok so its not exactly 'tuna mayo' but its a great vegan alternative which is absolutely delicious, and from what i can remember this is so much better than tuna mayo!

This simple tasty recipe makes for a great sandwich filling, topping jacket spuds, adding to salads, mixing with pasta, or even as a dip for tortilla chips.





Ingredients 

Chickpeas 
Sweetcorn 
lemon juice 
celery 
Avocado 
(or you can use a vegan mayo instead)
fresh coriander 
parsley 
paprika 
salt & black pepper 
apple cider vinegar 





Method 

Start with a whole can of chickpeas, you can also prepare dried if you prefer.
mash up the chickpeas using a fork or if you have a food processor you can use that as it will probably be quicker!
leave some chunks in the mixture, squeeze in a whole fresh lemon, and a tablespoon of apple cider vinegar.
Add a whole mashed avocado to the chickpea mix this acts as a binder you could also use veganaise instead, however the avocado's healthier. 
  
chopped up some fresh celery and coriander into the mix. 
Then add in your sweetcorn 
lastly add your choice of salt pepper herbs and spices. 

This mixture makes quite a few servings you can store in the fridge for 2 days in a container.
