vegan avocado pesto pasta

Today I wanted to share with you my 'healthy vegan avocado pesto recipe', it tastes just as great if not better than regular store bought pesto, and is fully natural and nutritious, its definitely an all round crowd pleaser.


of your choice (I used a gluten free spaghetti made from brown rice)

for the pesto

1 whole Avocado
 a large handful of fresh basil
Pine nuts 
(you can also substitute for another nut such as cashews)
The juice of 1 Lemon
1 clove of garlic (adjust if necessary)
handful of rocket (optional)
Nutritional yeast
salt pepper 


Its very simple just add all of the ingredients into a food processor or blender and blend until it becomes a smooth sauce like texture. 

Then stir in with your pasta top with fresh pine nuts and nutritional yeast for a cheesy flavour. 
feel free to alter the recipe as desired try adding parsley or coriander for a fresh take. 
Or even serve with zucchini noodles.
