Before I went vegan, I used to enjoy cottage cheese regularly, recently I've been trying to up my intake of probiotics, due to suffering with lots of digestive problems.
I love coconut yogurt, and whilst grocery shopping online, cottage cheese came to mind.
I searched allover the internet trying to find a pre-made vegan cottage cheese, however they don't currently stock one.
So i found the next best thing an easy and fairly cheap recipe, so I thought I would share.
Ingredients
Silken tofu a whole block
I think this would work better, however i couldn't find silken at my local store, so just used the regular firm kind, which still worked out pretty well.
Unsweetened almond milk 3-5 tbsp
(Or any unsweetened plant milk of your choice)
Apple cider vinegar 1-2 teaspoons (for the probiotic benefits)
Juice of a whole lemon
sea salt, chives, parsley, dill, black pepper, or any herbs and spices of your choice!
Recipe
Very simple you just wiz up all the ingredients in a blender or food processor, until it forms a cottage cheese like texture, you can make it as smooth or lumpy as you would like.
Its perfect with crackers or on a salad I also enjoyed mine with pineapple.
It makes a few servings and you can keep it in the fridge for 2-3 days.
You can probably tell from the picture it looks exactly like cottage cheese, but does it taste like cottage cheese?
Its been a long time since I've eaten dairy cottage cheese so I can't say for sure, but I think it tastes pretty similar and better!
I think adding chives definitely helped give it that cottage cheese like flavour as it tastes just like the cottage cheese & chive versions you pick up at the supermarket.
