Healthy filling Vegan salad #1

So I am a big lover of salads, but one thing I hate is when you go to a restaurant, order a salad and they come out with the tiniest plate of the bog standard lettuce, cucumber and tomato.
I mean there's tonnes of different lettuce and salad leaf varieties and veggies, so it shouldn't be difficult to come up with an inventive salad.
And if anything salad should be on the biggest plate, I like to think of it as a free food!

So I thought I would share with you some of my favourite filling, Vegan salads.

I was absolutely starving whilst preparing this, and it took all the willpower in me not to eat it all before I took a picture haha. 

Anyway this lovely salad contains:

The bog standard: Romaine lettuce, Cucomber, baby plum tomatoes

Red mirabella peppers
Raw mushroom, I love raw mushroom in salads but if you prefer you can grill them, you can also do the same with the peppers.

Avocado (is a salad really complete without avocado)
Chickpeas (filling and delicious and lots of protein)

Raw apple cider vinegar I am not a big fan of highly processed salad dressings so I've been using a lot of apple cider vinegar lately, it tastes great and has many health benefits!
But if you prefer you can use your fave salad dressing or make your own.

I also sprinkled some black pepper and turmeric on the top because these are my favourites and also have numerous health benefits, and I am all about health in case you haven't noticed:)
